Fast and Easy Jambalaya

I created a new recipe today and Tim said it was so good that I should write it down. So I will write it here so you can all try it too.

Ingredients:
Hot Link Sausage left over from BBQ the day before
Chicken tenders from costco cut up to bite sized pieces
Onion
minced Garlic
can beef broth
can diced tomatoes
rice
olive oil

Put olive oil in a pot over med heat. While it is warming up chop up the onion then put that in the pot and stir it around a little bit. Add 2 spoonfuls of minced garlic. Cut up the chicken and put that in. Once the chicken isn’t pink anymore add the beef broth and diced tomatoes (with the juice), bring to a boil. Then put in the sausage and the rice and turn it down to low and simmer for about 20 min.

I did 1 1/4 cup of rice since my broth + tomato cans were 29oz together which is a little more then 3 cups, I wanted it to be a little juicy so I didn’t stick to the 2 liquids to 1 rice rule and it came out good. So you will have to do the own math on yours when you do it to figure out how much rice to do.
